Delicious Desserts For Diabetics For Christmas

It's easy for diabetics to feel deprived at Christmas, when everyone around is eating cookies, cake, and other goodies. But with the right recipes diabetics can enjoy delicious holiday food too!Here are recipes for cookies, cake, pudding and pie, just for your Christmas healthy eating!Diabetic Thumbprint CookiesIngredients1/2 cup butter or 1/2 cup margarine, softened1 egg1/2 teaspoon vanilla1 1/4-1 1/2 cups flour1/2 cup chopped nuts3 teaspoons sugar substitute2 tablespoons diabetic sugar-free jam or 2 tablespoons sugar-free jellyDirectionsBeat together butter, egg, vanilla, and enough flour so dough is no longer sticky.Mix in nuts.Chill until firm enough to shape and roll into balls.Place balls on an ungreased cookie sheet.Dip your thumb in flour.Press firmly in the middle of each cookie.Bake 15 minutes or til golden brown on the bottom (350F).Remove from oven.Sprinkle with artificial sweetener.Allow to cool.Fill hollows with jam or jelly.Keep refrigerated.Sugarless Christmas Applesauce CakeIngredients:2 cups water2 cups raisins1 cup unsweetened apple sauce2 eggs2 tbsp liquid sweetener3/4 cup cooking oil1 tsp soda2 cups plain flour1 1/4 tsp cinnamon1/2 tsp nutmeg1 tsp vanillaDIRECTIONSCook raisins in water until tender. Cool, Now add the raisins, applesauce, beaten eggs, liquid sweetener, cooking oil and mix well.Blend in the other ingredients and mix well. Add vanilla.Pour into greased loaf pan.Bake about 1 hour at 350 degrees.Fruit CakeIngredients1 lb. dates, chopped1 lb. raisins2 c. nuts, chopped1 c. margarine3 big ripe bananas1 tsp. nutmeg6 eggs3 c. self-rising flour1 (16 oz.) can crushed pineapple in own juiceDirectionsDo not pre-heat the oven.Remove juice from pineapple. If it does not equal a cup, add water.Mix dates, raisins and nuts with flour, then mix in pineapple.Cream bananas, nutmeg and margarine together.Next, mix in one egg at a time.Add 2 cups flour and the pineapple juice. Mix.Cook at 300 degrees for about 2 1/2 hours.Keep cake refrigerated or sealed in an air-tight container.Christmas Bread PuddingIngredients6 slices enriched white bread3 med. bananas, peeled and sliced1 cup sliced peaches with juice1 cup cranberries1 cup brown sugar replacement1tsp. ground cinnamon2/3 c. water1/2 tsp. banana extract1/2 tsp. brandy extractGrated nutmegDirectionsOn a baking sheet, toast the bread at 325 degrees until dry.Cut toast into cubes.Combine toast cubes and fruits.Dissolve brown sugar and cinnamon in water. Add extracts.Pour over fruit mixture, turn until well coated.Let stand 5 minutes.Turn again, scraping down sides of bowl.Place mixture in quart size casserole.Bake uncovered for 30 minutes.Serve warm with dusting of nutmeg.No-Cook Pumpkin PieIngredients1 baked & cooled 9" pie shell2 small pkg. sugar-free instant vanilla pudding2 cups milk1 cup. canned pumpkin1 tsp. pumpkin pie spice1/4 tsp. nutmeg1/4 tsp. ginger1/2 tsp. cinnamonDirectionsBlend all ingredients in blender until smooth.Pour into pie shell and chill until ready to serveI hope you enjoy these recipes and have a happy holiday season!By Rhetta Akamatsu - Rhetta is the author of The Irish Slaves, published October 2010, and Haunted Marietta, published by History Press in September, 2009.
